Ground Breaking Vanilla ‘Cloudcakes’

Once upon a time, there was a kingdom called YouTube. The people here were termed ‘YouTubers’.

This kingdom wasn’t governed by one king or queen. There were several rulers, each contributing in a different way to the betterment of the kingdom. There were the BookTubers, such as Empress ‘Hailey In Bookland’. There were some who seemed to be all-round YouTubers, such as Princess ‘Zoella’. There were hundreds of thousands of them, each bringing something new to the kingdom. And then, there were the FoodTubers.

One such FoodTuber gave himself the title of ‘BakeLikeAPro’. He spent most of the time creating desserts that tasted sublime and looked even better.

It so happens that he has a recipe for a vanilla cupcake, probably the first thing any aspiring pastry chef learns to make.

But this is no ordinary recipe.

No, this is a masterpiece. This man has somehow created a treat that dissolves in the consumer’s mouth as soon as it is placed there. It is the very definition of melt-in-the-mouth. Every other cupcake seems impoverished in comparison. Sometimes, one doubts that it even existed, because it was so light and fluffy.

Hence, I shall to refer to them as ‘cloudcakes’

I had taken a trip to this kingdom once, where I got the chance to observe the ‘BakeLikeAPro’ guy work his magic in the royal kitchens.

I learnt his ways, and would like to share the recipe with you so that you may recreate these cupcakes for your friends and family.

Just to be clear, this recipe belongs to the culinary master from ‘BakeLikeAPro’. It is not mine. However, the pictures show the results of my own baking. Click here to visit the kingdom of YouTube and watch the master make these cupcakes in person, just as I did

 

Ingredients 

  1. 1/2 cup milk
  2. 1 1/2 cups all purpose flour
  3. 2 eggs
  4. 2 tsp vanilla extract
  5. 2 tsp baking powder
  6. 1 cup sugar
  7. 1/2 cup unsalted butter

Putting It All Together 

  1. You know what’s coming guys. Softened butter, sugar, cream until light and fluffy.
  2. Next, crack in your eggs and combine well. Some people add the eggs one by one, but I just do them both at the same time and I’ve never seen a difference in the results. Anyway, make sure to mix this up real good, because scrambled-egg flavoured cake is just not appetising.
  3. Vanilla! Yum! Chuck it in there!
  4. Sift together your baking powder and flour.
  5. Alternating the flour mixture and the milk, add both of them into the batter.
  6. Bake for 20-25 minutes in a preheated oven at 350 F or 180 C (or until golden brown, timings can vary greatly depending on the oven)

Here’s how they turned out!


As you can see, they look so beautiful when baked. I made these for my little brother’s birthday a year ago, who happens to be born on St. Patrick’s Day! Hence the decor. For icing, I just used some basic vanilla buttercream with some more milk so it would have a thinner consistency. For the little clover in between, I took a piece of baking paper which I cut in the shape of the leaf, put it on the icing, and sifted icing sugar on the top. After removing the paper, it formed such a pretty design!

My brother didn’t seem to notice the decor though. He just wanted to eat it.

Makes sense. I mean, he’s four years old. 😂

Anyway, no ‘Notes and Specifications’ section today because these cupcakes are super non finicky and easy to make.
