Mother’s Day Cookies!

Look who’s back? It’s me me me me.

Yesterday was mother’s day! I hope all the mommies in the world had a good time, you guys are the best. I tried my level best not to annoy my mom yesterday.

She says it didn’t work.

Back in 2015, when we were in the States on vacation, I had made these cookies for mother’s day, and they were a HUGE hit. All three moms in the household had loved them, although my sister and I ate most of ’em 🙂 .

These are perfect because they are just simple chocolate chip cookies which I decorated with royal icing! Cute, easy-to-make, and delicioussss. They’ve got it all!

This is not my recipe. It has been developed by the cool guy from the BakeLikeAPro YouTube channel. If you’re a regular reader of mine, then you probably know this guy pretty well because I use a whole bunch of his recipes. I’m kind of obsessed with him, but I’m not creepy I promise. Ingredients:

  1. 1/2 cup unsalted butter
  2. 1 cup brown sugar
  3. 1 1/2 cups all purpose flour
  4. 1 tsp vanilla
  5. 1 egg
  6. 1/4 tsp salt
  7. 1 tsp baking powder
  8. 1 cup chocolate chips (or you know, a cup or two extra 🙂 )
  9. Some royal icing (I dyed it blue, but you can dye it whichever colour you would like)

Putting It All Together

  1. You guessed it: cream the butter and sugar until light and fluffy.
  2. Add in your egg and your vanilla, and make sure to combine that really well to rid the dough of any eggy taste.
  3. Sift your flour, baking powder, and salt into the dough. Mix until well combined. A slightly sticky dough should be formed.
  4. The good part: add in your chocolate!
  5. Scoop your cookies out onto a cookie sheet using two spoons, or an ice cream scoop. There are specialised cookie scoopers now, and I’ll post a picture of my Better Crocker one once I get home.
  6. Bake your cookies at 375 F or 190 C for about thirteen minutes, or until they’re golden brown.
  7. Allow the cookies to cool completely before you do this step. Put your royal icing into a piping bag, and pipe out any Mother’s Day message you would like on the cookies. Let the icing set.
  8. Eat away!

Also, I used a premade package of Betty Crocker’s Blue Royal Icing which comes with the piping tip, but you can always make your own. There are plenty of easy recipes available on YouTube.
